Our Ciders And  Wine

Core is our original recipe, hard cider. Core is made up of a blend of bitter sharp and dessert apples. It is fermented using a semi-dry hybrid yeast.


Semi-Dry hard cider

Bairille Dair is made up of a blend of bitter sharp and dessert apples. It has been fermented using an old English Ale yeast and Aged with French Oak.

Not too spicy or sweet just enough flavored to appreciate the Jalapeno.

Pineapple Jalapeno

When making Captain Shaddock’s we using a semi-dry hybrid yeast. We then dry hopped using fresh Cascade hops, and finished it with a hint of Grapefruit.

Made from black twig and greening apples. Dry and better at first with a complex finish.

Tennessee Twig

Aged with French oak

Beautiful Golden brown color. Made from Golden and Minnesota Russet apples. Rich with complex tannins .

We make these blends in small batches. By doing so we're able to play around with many different flavors throughout the year.
